The Healthy Gut Handbook

After reading Professor Tim Spector's book: The Diet Myth,  Justine was inspired to create a recipe book that would partner his research.  The Healthy Gut Handbook highlights the importance of diversity ;eating a range of different foods containing plenty of fermentable prebiotic fibre, probiotic ingredients and polyphenol-rich foods to help keep your gut microbes flourishing.

I love making this quick yoghurt pancake recipe fr I love making this quick yoghurt pancake recipe from my book ‘Quick and Easy’ because I don't need any scales – just a small yoghurt pot for all my measuring. They’re deliciously light and very simple to make – the key is to have your pan nice and hot before adding the batter. (You can swipe for the recipe – I’ve included the weights and measures in case you are using a larger 500g pot of yoghurt.)

I’ve topped it with yoghurt that I’ve strained overnight in the fridge until it’s really thick - it’s lighter than cheese and is the perfect addition to a warm salad. I’ve sprinkled the salad with a few mixed seeds, added some leaves and a drizzle of balsamic vinegar and extra virgin olive oil. An easy way to kick off a healthy 2021! 🥗
