This is one of our favourite bits of kitchen kitchen kit. If you’ve ever started carving a roast chicken only to discover that it’s still a little raw inside, or ruined an expensive joint of beef by overcooking it (and we have done both in the past), you’ll find that one of these handy, pocket-sized gadgets could transform your cooking (and your confidence).
Digital thermometers are a must-have in all professional kitchens as they are the only really accurate way of working out whether food has reached a safe eating temperature. You simply insert the long metal probe into cooked food and check the digital display.
We have tried out several of this type of thermometer over the years, but Thermapen is by far the easiest to use – and most reliable. (We love the fact that it’s made in the UK too.)

Thermapen products are more expensive than others on the market but we reckon it’s worth spending a little bit more for such a well made product. We’ve been using ours on a daily basis in the test kitchen for over two years and they are still going strong.

The thermometers come in a range of colours, but we like the red version best as it’s the easiest to find amongst all the gadgets in our cutlery drawer.  The display is easy to read and extremely accurate. What’s more, the metal probe folds back against the casing, so it doesn’t get damaged.

They’re deliciously light and very simple to make – the key is to have your pan nice and hot before adding the batter. (You can swipe for the recipe – I’ve included the weights and measures in case you are using a larger 500g pot of yoghurt.)
